Black Bean Soup

Ingredients
- 1 1/2 pints homemade beef bone broth. (Can use organic stock NOT commercial stock cubes)
- 1/2 tsp coconut oil
- 1/2 tsp olive oil
- 2 cloves garlic crushed
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 jalapeno pepper de-seeded and chopped
- 1/4 tsp fresh ginger
- 1/4 tsp turmeric
- 1 medium onion diced
- 1 can organic chopped tin tomatoes 420g approximately
- 1/2 red pepper diced
- 1/2 yellow pepper diced
- 1 handful chopped spinach
- 1 can black beans
- 1 small sweet potato peeled and chopped in small chunks
- chopped coriander/cilantro to taste
- fresh ground black pepper to taste
Instructions
- In heavy bottom saucepan melt the oils over medium-low heat and add the onion cumin and turmeric
- Fry for a couple of minutes until onions translucent and softening. Add peppers, ginger and chili.
- Stir a couple of mins to Coat everything then add stock and chopped tomatoes.
- Bring slowly to boil stirring occasionally to ensure nothing sticks.
- After 10 mins add diced sweet potato and simmer for 5 mins then add spinach and black beans. Simmer until potatoes soften.
- Season with black pepper and add half of the cilantro.
- Simmer on really low heat for 5-10 mins
- Serve with fresh cilantro
Notes
Soup can freeze or keep for five days. It is actually better reheated next day so flavors
blend. Enjoy!
TIP: Add more liquid at sweet potato stage if prefer thinner soup
