Beef Broth

A gut healing and nourishing beef broth

Ingredients
  

  • 1 lb raw organic beef bones (preferably NOT marrow-bone)
  • 1 stalk organic celery including leaves
  • 1 organic carrot
  • 1 tbsp apple cider vinegar to release minerals from bone
  • Fresh ground pepper to taste

Instructions
 

  • bake bones for 40 mins in hot oven around 375-400F.
  • Then put in pan cover with water at least 2“  More water the less intense the flavour.
  •  add organic celery (including leaves) break into three.
  • add organic carrot (cut ends off and snap into 3
  • add apple cider vinegar and fresh ground pepper
  • Bring to boil scoop off “foam” with slotted spoon. 
  • Add water if necessary.
  • Simmer 8 hours or put in crock pot

Notes

TIPS:
Bake bones first otherwise it will taste weird and will spoil quicker. If you do a roast with meat on the bone like in the old days this is great.
Do not be tempted to pimp it by adding garlic or spices or other veggies. If you use it as a base for soup etc. add them at that stage.
The vinegar sounds odd but is important.
Buy organic
Will keep in fridge in airtight container e.g. mason jar for at least four days or freeze for at least two months.
To make stock cubes reduce water and put in ice cube tray when cool. Cover with PCB-free cellophane.
Can easily make more by doubling or tripling quantities.
Doggies can chew on cow bones; unlike chicken bones they are safe. So an extra treat for fido!
