Immune Support Chicken Soup

This is a ‘clean’ purifying soup to sooth your respiratory tract and support immune system.

Ingredients
  

  • 1 onion cut into chunks
  • 1 organic celery stalk roughly chopped
  • 1 organic carrot roughly chopped
  • 4 oz peeled scrubbed ginger sliced
  • 1 tsp cayenne
  • 1 garlic clove crushed
  • 5 whole black peppercorns
  • 2 sprigs fresh rosemary
  • 1/2 fresh lemon
  • 2 free range organic chicken legs with thighs, skin and bones
  • 2 quarts spring water (Still)
  • 1 fresh parsley garnish

Instructions
 

  • Combine onion, celery, ginger, carrot, garlic, and peppercorns in a large heavy pot. Add chicken,
  • Add 6 quarts water (preferably filtered or spring water); bring to a boil over medium-high heat
  • Add cayenne, the lemon and rosemary. Cover with lid slightly ajar
  • After 20 mins
    Remove lid reduce heat to low; simmer, uncovered, until broth is fully flavored, about 2 ½hours longer.  (Can also cook in crock-pot)
  • Remove chicken legs from broth. When cool enough to handle, discard any skin and bones, and coarsely shred meat.
  • Place a fine-mesh sieve over another large pot; strain broth, discarding solids in strainer.

  • NOTE: unlike most soups do not brown onion and vegetables in oil first.
